The growing season is still in full bloom, maybe a little too much bloom!
As your herbs start to flower, they are putting all of their energy into creating the blooms that will turn to seed. If you want the seeds, let them bloom. If not, pinch off the flower buds as soon as you see them - that will make the plants focus on growing more leaves instead.
To harvest your herbs, cut off a bunch and hang up to dry. You can also dry herbs in a dehydrator or a low temperature oven. Store dry herbs in a sealed jar. Another trick: cut up your herbs (like basil) and put in ice cube trays with a little olive oil to use all winter long.
