Smashed Parrots

(parsnips and carrots mashed together)

This dish is my ultimate comfort food - always a staple at family dinners. Easy to make, looks good on the table, and is just as good as cold leftovers the next day. ~ Tracy

Plan Do Eat


  • Equal parts fresh carrots and fresh parsnips


  1. Peel and chop carrots and parsnips.
  2. Boil together until soft.
  3. Mash with a potato masher.


The nutritional value of carrots is well known, but did you know that parsnips are good for you too? If you are unfamiliar with parsnips, they are a root vegetable that look like yellow-white carrots. They are chock-full of vitamin C, vitamin K and folate, as well as vitamin E, magnesium, and thiamine. Parsnips are a good source of fiber and antioxidants.
