Chopped Salad and 3 Dressings

Love the bagged chopped salads but not the plastic and the price? This is great way to keep hearty greens in your winter life before we can start growing again in the spring. Buy any combination of green or red cabbage, dinosaur (lacinato) kale, curly kale, or brussel sprouts. Shred or chop finel - if you buy all of these be prepared for a LOT of salad. ½ cabbage and one bunch of Kale will last me (one person, one salad a day) for a whole week. Keep the salad undressed, then mix these dressings and have these toppings on hand for different flavors throughout the week.

Lemon Vinaigrette


Add a hard salty cheese like asiago and croutons.

Sesame Ginger


Add chopped peanuts, crushed dry instant ramen noodles and matchstick carrot slices.

Balsamic Vinaigrette


Add roasted pepitas, olives, and bits of feta or parmesan cheese shavings.
