Keith ParksSun Prairie and culinary school trained rancher, Keith Parks, will take you on a tasting adventure around western European culinary beef traditions. As you taste the difference in grass-fed beef, you will learn how the preparation of lower-priced cuts can yield tons of variations for amazing weekday dinners. This class is a combination of observation, hands-on preparation, and tasting. A bonus will be learning three easy, versatile sauces that will have your parents wondering if you are, perhaps, the next Julia Child, Alice Waters, or Samin Nosrat. Keith will also decode meat buying terminology, educate on cuts and their various uses, and provide instruction on these three classic dishes that you can reproduce at home.

Pan-Seared Ranch Steak ranch steak tenderize Olive and Tomato Ragu
Tagliata (Italian sliced steak) flank and skirt steak grill, broil Vinaigrette, Chimichurri, Romesco

Keith is owner of Sun Prairie which provides sustainable meats to the Front Range and beyond. Currently, Sun Prairie offers 100% grass fed (and grass finished), all-natural, free range beef and heritage, Berkshire-breed, humanely raised pork. Keith attended Cook Street Culinary School’s Professional Certificate Program in 2013 and is passionate about meat, sustainable practices, and of course, cooking delicious food for friends and family.
